Delicious, Low-Fat, Vegan Blueberry Scones (Recipe)

Mix 2 1/2 cups flour, 1 tsp baking powder, and 1/3 cup coconut sugar. Pour in 1/2 cup applesauce and 3/4 cup almond milk. Blend until smooth. Knead the batter into a dough. Mix 1/2 cup blueberries into the dough and place in a foil pan. Bake at 425°F for about 20 mins. Remove it from the oven, allow it to cool and dig in! This quick bite is a low-fat, vegan, nutritive anytime mood lifter.

Ingredients

  • 2 1/2 cups flour
  • 1 tsp. baking powder
  • 1/3 cup coconut sugar
  • 1/2 cup applesauce
  • 3/4 cup almond milk
  • 1/2 cup blueberries

Direction

  1. In a large bowl, mix the dry ingredients together and then add the wet ingredients.
  2. Knead the dough and add the blueberries to it.
  3. Place the kneaded dough in a foil pan and in to the oven. Bake at 425°F for about 20 minutes.
  4. Take it out of the oven. Cut a slice and enjoy the delicious, low-fat, vegan scones.

I lost 45 pounds in a few months.I also started to eat healthier and learn more, however there are a lot of myths out there that I used to believe such as certain animal products being good for you. A few years later after watching "Vegucated" I knew I couldn't go on eating animals and participating in the suffering of animals so I went vegetarian. A few months later I went vegan and it was the best decision of my life. I no longer get bloated, I have more energy and I am able to maintain my weight even though I eat a lot. Most importantly I feel peaceful inside knowing I chose consciously not to consume animals or products of them.
