Raw Cacao Pudding Recipe
– 1 avocado
– 1/2 cup coconut milk
– 3 tablespoons raw cacao powder
– 2 tablespoons raw local honey or liquid stevia
– 1 teaspoon vanilla extract
– 1 teaspoon unsweetened shredded coconut (optional)
– 3 drops food grade peppermint essential oil (optional)
Scoop the flesh from the avocado and place in either a food processor or high-powered blender like a Vitamix. Add in remaining ingredients except for the shredded coconut. Blend until smooth. Scoop into cups and refrigerate for at least 3 hours. Sprinkle with shredded coconut if desired.
